The f. by which alcohol is converted into acetic acid. It consists essentially in a process of oxidation, CH3.CH2OH + O2 = CH3.COOH + H2O, and is produced by various organisms, especially by the Bacillus aceti, the Bacterium aceti, and the Bacterium xylinum.
